  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup erythritol
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, and erythritol, then stir in melted butter to form a crust.
  3. Press the mixture into the bottom of a lined baking dish.
  4. In another bowl, beat the cream cheese until smooth, then mix in vanilla and eggs one at a time.
  5. Stir in sour cream until well combined.
  6. Pour the cream cheese mixture over the crust.
  7. Bake for 35-40 minutes or until the center is set.
  8. Let cool before slicing into bars.
