1 cup crushed graham crackers
1/4 cup sugar
1/2 cup melted butter
2 cups cream cheese
1 cup sugar
3 eggs
1 teaspoon vanilla extract
1 cup fresh strawberries, pureed
Instructions
Preheat the oven to 325°F (160°C).
In a bowl, mix crushed graham crackers, sugar, and melted butter. Press the mixture into the bottom of a springform pan.
In another bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla.
Pour half of the cheesecake mixture over the crust. Drizzle half of the strawberry puree over it and swirl with a knife. Repeat with the remaining cheesecake and strawberry puree.
Bake for 55-60 minutes until the center is set. Let cool before refrigerating.
Chill in the refrigerator for at least 4 hours before serving.
Notes
For best results, use room temperature cream cheese.
Strawberry puree can be replaced with other fruits for variation.
