  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, puréed

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Pour half of the cheesecake batter over the crust. Swirl in half of the strawberry purée. Repeat with remaining batter and purée.
  5. Bake for 60 minutes or until set. Let cool and refrigerate for at least 4 hours.

Notes

  • For a richer flavor, add sour cream to the cheesecake batter.
  • Use a water bath to prevent cracks on the surface.
