  • 1 cup salsa verde
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, salsa verde, black beans, corn, rice, cheese, cumin, garlic powder, salt, and pepper.
  3. Transfer the mixture into a greased baking dish.
  4. Top with additional cheese if desired.
  5. Bake for 25-30 minutes or until heated through and cheese is bubbly.
