  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar and vanilla, mixing well.
  5. Add the eggs one at a time, mixing on low speed until just combined.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set. Turn off the oven and let the cheesecake cool inside for 1 hour.
  8. Refrigerate the cheesecake for at least 4 hours before serving.
