  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together flour, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  5. Gradually add flour mixture and buttermilk alternately to the creamed mixture.
  6. Fold in coconut and pecans.
  7. Pour the batter into greased cake pans.
  8. Bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Let cool before frosting with cream cheese frosting.
