A delicious and simple recipe for a dairy-free cheesecake that features fruity flavors.

Ingredients

  • 1 cup cashews, soaked
  • 1/2 cup coconut cream
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1/2 cup mixed berries
  • 1 cup almond flour
  • 2 tablespoons coconut oil, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, blend the soaked cashews, coconut cream, maple syrup, vanilla extract, and lemon juice until smooth.
  3. In a separate bowl, mix the almond flour and melted coconut oil until crumbly, then press into a greased cheesecake pan for the crust.
  4. Pour the cashew mixture onto the crust and smooth the top.
  5. Bake in the preheated oven for 25 minutes, then let it cool at room temperature.
  6. Top with mixed berries before serving.

Notes

  • For a nut-free version, substitute the cashews with silken tofu.
