  • 2 cups gingersnap cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup eggnog
  • 3 large eggs

  • 1 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine crushed gingersnap cookies and melted butter. Press this mixture into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese and sugar until smooth. Add in the eggnog, eggs, vanilla extract, and nutmeg, mixing until combined.
  4. Pour the filling over the crust in the springform pan.
  5. Bake for about 60 minutes or until the center is set.
  6. Allow it to cool before refrigerating for at least 4 hours.
