- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1/2 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 cup heavy whipping cream
- In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well and press into the bottom of a springform pan.
- In a separate bowl, beat the cream cheese until smooth. Gradually add powdered sugar, lemon juice, and lemon zest, mixing until well combined.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
- Spread the cream cheese filling over the crust in the springform pan. Smooth the top with a spatula.
- Refrigerate for at least 4 hours or until set.
- Remove from the springform pan and slice to serve.
