  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 cup heavy whipping cream

Instructions

  1. In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well and press into the bottom of a springform pan.
  2. In a separate bowl, beat the cream cheese until smooth. Gradually add powdered sugar, lemon juice, and lemon zest, mixing until well combined.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
  4. Spread the cream cheese filling over the crust in the springform pan. Smooth the top with a spatula.
  5. Refrigerate for at least 4 hours or until set.
  6. Remove from the springform pan and slice to serve.

Notes

  • For extra lemon flavor, add more lemon zest.
  • Serve with fresh berries for garnish.
