This creamy creme brulee cheesecake combines the rich flavors of traditional creme brulee with a smooth, velvety cheesecake.

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 packs (8 oz each) cream cheese
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup heavy cream
  • 1/4 cup brown sugar for topping

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and granulated sugar until smooth. Add vanilla extract and mix well.
  4. Beat in eggs one at a time, then mix in heavy cream until fully incorporated.
  5. Pour the cheesecake batter over the crust.
  6. Bake in the preheated oven for 60 minutes, or until set.
  7. Remove from oven and let cool. Refrigerate for at least 4 hours before serving.
  8. Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize.
