Indulge in the rich and creamy flavors of this decadent cheesecake inspired by the classic French dessert, creme brulee.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs and melted butter until well mixed. Press into the bottom of a springform pan to form a crust.
  3. In a large mixing bowl, beat together the cream cheese and granulated sugar until smooth.
  4. Add vanilla extract and mix well.
  5. Incorporate eggs, one at a time, mixing well after each addition.
  6. Pour in heavy cream and continue to mix until fully blended.
  7. Pour the cream cheese mixture over the prepared crust in the springform pan.
  8. Bake for 60 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 4 hours or overnight.
  10. Before serving, sprinkle brown sugar over the top and use a kitchen torch to caramelize it until golden brown.
