- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup brown sugar
- Preheat your oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs and melted butter until well mixed. Press into the bottom of a springform pan to form a crust.
- In a large mixing bowl, beat together the cream cheese and granulated sugar until smooth.
- Add vanilla extract and mix well.
- Incorporate eggs, one at a time, mixing well after each addition.
- Pour in heavy cream and continue to mix until fully blended.
- Pour the cream cheese mixture over the prepared crust in the springform pan.
- Bake for 60 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours or overnight.
- Before serving, sprinkle brown sugar over the top and use a kitchen torch to caramelize it until golden brown.
