  • 1 ¾ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In another bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until well combined.
  4. Add eggs, one at a time, mixing on low speed after each addition.
  5. Stir in sour cream and melted chocolate until the mixture is smooth.
  6. Pour the filling over the crust and smooth the top.
  7. Bake for 55 to 60 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, use dark chocolate instead of semi-sweet chocolate chips.
  • Top with whipped cream and chocolate shavings for decoration.
