  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add chicken and cook until browned. Remove and set aside.
  2. Add onion, garlic, carrots, and celery to the pot. Sauté until soft.
  3. Add the diced tomatoes and chicken broth. Bring to a boil.
  4. Stir in the orzo and Italian seasoning. Return chicken to the pot.
  5. Simmer until orzo is cooked, about 10 minutes.
  6. Stir in spinach and season with salt and pepper before serving.
