1 pound chicken breast, diced
8 ounces bacon, chopped
1 onion, diced
2 carrots, diced
2 cloves garlic, minced
1 cup chicken broth
1 tablespoon fresh thyme
1 tablespoon all-purpose flour
1 pie crust
1 egg, beaten for egg wash
Instructions
Preheat the oven to 400°F (200°C).
In a pan, cook the bacon until crispy then add the diced onion and carrots until softened.
Add the garlic and cook for another minute.
Stir in the diced chicken and cook until browned.
Sprinkle flour and thyme over the mixture, stirring well.
Add chicken broth and simmer until thickened.
Pour the mixture into a pie dish and cover with the pie crust.
Brush the crust with the egg wash and cut slits for steam to escape.
Bake for 25-30 minutes or until golden brown.
Allow to cool slightly before serving.
