A delicious and easy baked raspberry cheesecake that is perfect for any occasion.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh raspberries

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl.
  3. Press the mixture into the bottom of a springform pan to create the crust.
  4. In a separate bowl, beat the cream cheese until smooth.
  5. Add sugar and vanilla, mixing well.
  6. Add eggs one at a time, mixing well after each addition.
  7. Pour the cream cheese mixture over the crust.
  8. Drop raspberries on top of the batter.
  9. Bake for 55-60 minutes or until the center is set.
  10. Cool completely before serving.

Notes

  • For best results, use room temperature cream cheese.
  • Feel free to use frozen raspberries if fresh ones are unavailable.
