- 1 pound chicken thighs
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons ground turmeric
- 1 teaspoon ground cumin
- 6 cups chicken broth
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 cup spinach
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add onions, garlic, and ginger; sauté until onions are translucent.
- Add chicken thighs and cook until browned on both sides.
